Easy keto egg roll in a bowl

Ingredients

  • 1¼ pounds hot pork sausage
  • ¼ c. Water
  • 3 c. Shredded green cabbage
  • 1 medium carrot grated
  • ½ t. garlic powder
  • 2 T. Roasted sesame oil
  • ½ T. finely chopped fresh ginger
  • 2 tbs chopped green onions
  • 1 Tb rice vinegar
  • 2 T. Coconut Amino Tamari
  • Sea salt and black pepper to taste
  • Optional accessories:
  • 1 T. Roasted Sesame

instructions

  1. Heat a large, high-sided skillet over medium to high heat. Add sausage and cook, breaking meat into small pieces as it cooks, about 5-6 minutes. Once the sausage turns pink, remove from heat and carefully drain excess fat from pan. *Safety tip: Wipe up any excess fat dripping off the side of the pan before returning to the stove.
  2. Return the skillet to heat. Add water and scrape the browned pieces from the bottom of the pan with a spoon. Reduce the heat to medium and add the chopped cabbage, carrots, garlic powder, sesame oil, ginger and green onions. Season with salt and black pepper, to taste, and cook, stirring frequently, until cabbage and carrots are wilted, about 4-5 minutes.
  3. Add rice vinegar and coconut aminos and stir well. Cook again for a minute or two, or until completely heated through. Remove from heat and transfer to a plate or bowl. Sprinkle with toasted sesame seeds, if using, and serve immediately. Enjoy!
